You only need simple ingredients to make this yummy dish and the making process is easy. You make the tomato sauce pasta and the white sauce, put them in a baking tray and bake!

What do I need to make the easy vegan pasta bake?

For the tomato sauce pasta

  • any kind of pasta
  • garlic
  • onions
  • Eggplant
  • button mushrooms
  • cherry tomatoes
  • medium broccoli
  • tomato puree
  • dry herbs
  • salt & black pepper
  • vegan cheese

For the white sauce

Topping (optional)

For the tomato sauce pasta, you can add any vegetables such as cauliflower, spinach and zucchini but I would say do not omit the onion and garlic as they add delicious flavour to the dish. If you don’t have nutritional yeast for the white sauce, you could leave it out. The flavour will be then lighter and less cheesier but still tasty☺

Here, I’m going to briefly explain how to make this easy vegan pasta bake. Please see the full instructions below if you are trying this recipe!

First, you need to make the tomato sauce pasta!

  • Cook the pasta, set aside.
  • Cook the vegetables in a wok and add in the tomato puree, dry herbs, salt, black pepper and cook for few minutes.
  • Turn off the heat and add the cooked pasta and vegan cheese. Stir well and set aside.

Now, let’s make the while sauce☺

  • In a pot, melt the vegan margarine and add in the flour and mix together with a wooden spoon until it forms a ball of dough.
  • slowly start adding the soy milk and vegetable stock with one of your hands while the other hand is whisking constantly. Stir vigorously until smooth. Continue cooking on a low heat and stir constantly until it thickens and becomes a creamy, white saucy consistency. Take off the heat and set aside.

Preheat the oven to 200°C and grease a baking tray. It’s time to get ready to bake!

  • Put the tomato sauce pasta into the baking tray evenly. Spread the white sauce evenly over pasta and sprinkle some bread crumbs and vegan cheese if using.
  • Pop it in the oven and bake for 30-35 minutes or until the top is slightly golden.
  • Let it sit for 5-10 minutes before serving. It will make it easier to divide into portions.

Store leftover covered with foil or a lid in the fridge up to 3 days. Reheat thoroughly in the oven or using a microwave before serving.

Ingredients
  

For the tomato sauce pasta

  • 300 g pasta any kinds
  • 1 tbsp oil for cooking
  • 5 cloves garlic minced
  • 3 medium onions chopped finely
  • 1/2 large Eggplant diced small
  • 10 medium button mushrooms thinly sliced
  • 10 cherry tomatoes each one cut into half
  • 1/2 medium broccoli cooked until soft enough to pierce with a folk
  • 4 tbsp tomato puree
  • 1/2 tsp dry herbs
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 40 g vegan cheese diced small

For the white sauce

  • 90 g vegan butter
  • 50 g plain flour
  • 1000 ml soy milk
  • 200 ml vegetable stock
  • 1 tsp garlic puree
  • 4 tbsp nutritional yeast
  • 1 tsp salt
  • 1/4 tsp black pepper

Topping (optional)

  • 40 g diced vegan cheese finely chopped
  • bread crumbs

    Instructions
     

    For the tomato sauce pasta

    • Cook the pasta according to your package instructions.
    • Heat the oil in a frying pan or a wok and cook the garlic, onion and eggplant until soft. Add in the cherry tomato and broccoli, continue cooking for 2 minutes.
    • Mix in the tomato puree, dry herbs, salt and black pepper, keep cooking for 2-3 minutes on a lower medium heat.
    • Turn off the heat and chuck in the cooked pasta and diced vegan cheese and stir. Set aside.

    For the white sauce

    • Melt the vegan butter in a pot and add in the flour and stir constantly until combined for about a minute or less. It forms a ball of dough.
    • Slowly start pouring in the soy milk and vegetable stock with one of your hand while the other hand string the mixture constantly with a whisk. Stir vigorously until smooth. Add in the rest of the ingredients and mix well.
    • Let the mixture bubble around the edge on a low heat and stir with the whisk. Repeat this a couple of times and you will see the mixture thickening. When it reaches the creamy, white saucy consistency, take off the heat.
    • Preheat the oven to 200°C (gas mark 6). Grease a baking tray about 25cm x 31cm or similar size.

    For assembling

    • Put the tomato pasta evenly into the prepared baking tray. Spread the white sauce over the pasta evenly.
    • Sprinkle the finely chopped vegan cheese and some bread crumbs (optional).
    • Pop it in the oven and bake for 30-35 minutes or until the top is slightly golden.
    • Let it sit outside the oven for 5-10 minutes before serving. It makes easier to divide into portions.
