Easy Vegan Sausage Rolls

This easy vegan sausage rolls is one of my old recipes that I have cooked a number of times. They are delicious and very easy to make so I decided to post in my blog☺ You need a ready rolled puff pastry sheet and things to go in the pastry to make the sausage rolls.

What you need to make Easy Vegan Sausage Rolls

You could replace the soya mince with cooked lentils. If you don’t like mushrooms, you could add grated carrot or an extra onion instead!

How can I make them?

  1. Place the soya mince in a ceramic bowl and pour boiled water to cover. Leave to soak for 20 minutes. Set aside.
  2. Place the diced potato on a microwave safe place and cook in a microwave for about 3 minutes or until soft. Set aside.
  3. Heat the oil in a frying pan and cook the mushrooms, garlic and onion until soft and slightly caramelised. cook them on a medium or lower heat so to avoid burning.
  4. Add in the cooked potato and hydrated soya mince (drained), and cook for a minute. Drop 2 table spoons of water and cook for a minute.
  5. Stir in the soy sauce, black pepper and mustard, and cook for a minute or until most of the moisture goes away.
  6. Turn off the cooker and add in the diced vegan cheese (if using). Transfer into a ceramic bowl and leave to cool to room temperature.
  7. Preheat the oven to the temperature that the package of your pastry suggests. Mine was 200° (gas mark 6). Prepare a baking tray lined with baking paper.
  8. Open and roll out the ready rolled pastry on your work station. Cut your pastry into half lengthwise and place the cooled filling on the middle of each pastry.
  9. Fold over both sides of each one and seal the openings with a bit of water and press gently with a folk.
  10. Cut the each one into 10 pieces with a bread knife and place them on the prepared baking tray. Bake for 25 to 30 minutes or until slightly golden on top.

I always serve these sausage rolls as a main with a side such as roast potatoes or polenta chips but they are also nice as a snack.

Ingredients
  

  • 3 tbsp dry soya mince
  • 1 tbsp oil for cooking
  • 8 medium button mushrooms diced small

  • 1 1/2 tbsp soy sauce
  • 1/4 tsp black pepper
  • 1 tsp Dijon mustard
  • 30 g vegan cheese diced (optional)
  • 375 g ready rolled puff pastry sheet

Notes

  • Please make sure your filling is cool enough for this. If the filling is warm that will soften the pastry too much when you put it. You might have a messy disaster!!
