Jacket potatoes are one of the dishes that helps us to warm up in the cold winter season. This jacket potatoes with baked beans and roasted veggies are very simple but delicious and nutritious, also it’s budget friendly!!
I make jacket potatoes with different fillings sometimes but my favourite is always with baked beans. I know it’s cheap but they are high in protein, fibre, other nutrients, and beneficial plant compounds. Surprised? Yes, it has added sugar, salt and additives but it’s tasty, quite healthy and super easy to prepare too!
The making process of this jacket potatoes is very simple. Put the potatoes in the oven to bake and while they are baking you can prepare the rest. If you don’t fancy the vegetables then you can skip it and just go for the potato and the beans. You could also sprinkle some grated vegan cheese as well.
Ingredients for this recipe
For baking potatoes
3 large potatoes washed
1 tbsp oil
1/2 tsp salt
1/4 tsp black pepper
For roasting vegetables
1 tbsp oil
2 medium onions
8 medium
For the rest
1 can baked beans
3 tsp vegan margarine 1 tsp each
Pretty simple isn’t it? You might have all these already in your kitchen☺ Even if you have to buy some of the ingredients. it should not cost too much.
How to make Jacket Potatoes with baked beans and roasted veggies
- Preheat the oven to 220°C (gas mark 7). Prepare a baking tray lined with baking paper. Pierce each potato with a folk few times.
- Drop the oil, salt and black pepper onto the baking tray, and give it a mix. With your hand, pick some of the oil mixture and rub over each potato. Leave the oiled potatoes on the tray.
- Put the potatoes on the tray in the oven and bake for 50 to 60 minutes or until potatoes are soft inside. You can stick a folk or a sharp knife to check this.
- While the potatoes are baking, prepare another baking tray lined with baking paper. Grease the baking paper with the oil and place the onion and mushrooms without overwrapping. Put it in the oven (at the same time as the potatoes) and bake for 30 minutes or until soft and slightly caramelised.
- When the potatoes and the vegetables are ready, take out from the oven.
- Open the can of baked beans and transfer to a microwave safe bowl, heat in the microwave for 3 minutes or until heated thoroughly.
- Cut each potato into half. Put the margarine on the potato and roasted vegetable, and then the beans. Sprinkle some salt and black pepper to taste if you wan to.
