Simple Vegan Bread Rolls

This simple vegan bread rolls are great for serving as a side with soup, pasta or other main dishes. You can also enjoy this for breakfast or a snack☺ It’s slightly crusty on the outside, soft inside and have very mild sweetness from a little amount of sugar added to it. It’s also really nice to make a sandwich with savoury or sweet filling with these rolls.

simple bread rollsI made this bread so that we can have soup for dinner with a roll bread. We usually have a slice of bread with our soup but I thought it would be nice to have a change. I used to think that bread making takes a long time because it requires kneading and letting the dough rise in a warm place. However, bread making got so much easier with instant yeast. It takes less time to knead and rise! I put all the ingredients together, knead and let the dough rise in our warm living room for one hour. By the time I’d done a bit of cleaning around our home and had lunch, the dough was ready to be shaped into bread rolls and bake☺

I imagine most of you have these ingredients already sitting in your kitchen cupboard, though if you don’t make bread often you might not have the instant yeast. You can get the instant yeast cheaply from many grocery stores.

How to make guide
  • The first thing you need to do is to mix the warm soy milk, sugar and the instant yeast in a large bowl and let it go frothy. It should take 3-5 minutes. Make sure the soy milk is just warm, not hot.  The hot temperature kills yeast so please be careful!
  • Add in the vegan margarine, flour and salt and mix with a spoon and it comes together but the dough should be very wet at this stage.
  • Take the dough out from the bowl and put it on a floured surface of your working table. Knead for at least 5 minutes. At the first the dough is wet so you will need to keep turning the dough over on the floured surface as you knead. Sprinkle more flour over the surface of your working table as needed. The kneaded dough should be soft and slightly sticky. Form the dough into a ball.
  • Place the dough in a greased bowl and cover with a cloth or towel and let it rise in a warm place for 1 hour until it’s doubled in size.
  • Gently punch down the double sized dough and shape into 8 bread rolls. Place them on a baking tin touching each other and bake for 20-25 minutes. Every oven is different so please keep an eye on your bread rolls!

Simple Vegan Bread Rolls

Easy bread rolls recipe with just few ingredients

Ingredients
  

  • 240 ml soy milk
  • 9 g instant yeast
  • 25 g sugar
  • 2 tbsp vegan margarine soft
  • 250-375 g plain flour
  • 1 tsp salt

Instructions
 

  • Put the soy milk in a bowl and heat in a microwave until warm, not hot. It's a kind of temperature suitable for little kid's warm drink.
  • Mix together the warm milk, instant yeast and sugar and let it sit for 5 minutes until it gets frothy.
  • Add the vegan butter, flour and salt in the frothy yeast mixture and mix until combined. At this stage, the dough is quite wet.
  • Take the dough out to a floured surface of your work table and start kneading. When you see the dough is sticking on the table, sprinkle more flour and continue kneading. I sprinkled flour 4 or 5 times during the kneading. Knead at least 5 minutes. I kneaded 10 minutes. The dough should be soft but slightly sticky.
  • Shape the dough into a ball and place in a large, greased bowl. Cover completely with a cloth and let it sit in a warm place for 1 hour until it's double in size.
  • Preheat the oven to 190°C (gas mark 5) and prepare a baking tin about 11 x 7 inch in size. Line the bottom with baking paper.
  • Gently punch down the rested dough and take it out to a floured surface of your work table. Cut the dough into half, shape each one into a log. Cut each one into 4 so that you have 8 pieces of dough now.
  • Shape each one into a bread roll shape and place them on the prepared tin, touching each other. Make sure you put them with the smooth surface facing up!
  • Bake for 20-25minutes until slightly golden on top. The baking time can vary depending on how your oven usually performs so please keep an eye on your bread rolls while baking!
  • Store leftovers in a container with a cover on up to 3 days.
