Vegan and Gluten Free Chocolate Chip Cookies

The first thing I want to say is.. you will not believe these are made of chickpea flour and so yummy!! These vegan and gluten free chocolate chip cookies are super easy to make with simple ingredients and very delicious. They can be a healthy dessert or snack option for anyone, especially kids will love these☺

What you need to make this vegan and gluten free chocolate chip cookies

For the chocolate, you can use either chocolate chips or crushed chocolate. If you crush the chocolate, please make sure you don’t over do it. It’s good to have some big bits and small bits!

How to make the cookies
  1. Preheat the oven to 180°C (gas mark 5 but I set to 4.5). Prepare a baking tray lined with baking paper.
  2. Cream the margarine and the sugar in a bowl with a folk until creamy and fluffy.
  3. Add the water, salt and vanilla extract and mix well.
  4. Add in the chickpea flour and the baking powder and mix until combine. Careful not to over mix!! Fold in the chocolate.
  5. Roll small balls (about 3.5 to 4 cm in diameter) and place them on the prepared baking tray. Make sure there is room between the cookies, they are going to spread!!
  6.  Flatten slightly with a wet spoon, put in the oven and bake for 12 to 15 minutes.
  7.  Leave them cooling down at least for 10 minutes before serving.

Vegan and Gluten Free Chocolate Chip Cookies

Chocolate chip cookies made with chickpea flour and other simple ingredients. Surprise your friends or family with this vegan and gluten free sweet treat!

Ingredients
  

  • 50 g vegan margarine
  • 50 g brown sugar
  • 1 tsp water
  • 1 tsp vanilla extract
  • little pinch salt
  • 1/4 tsp baking powder
  • 60 g chickpea flour it's called gram flour as well
  • 60 g dark chocolate crushed into small bits or use chocolate chips

Instructions
 

  • Preheat the oven to 180°C (gas mark 5 but I set to 4.5). Prepare a baking tray lined with baking paper.

  • Add the water, salt and vanilla extract and mix well.
  • Add in the chickpea flour and the baking powder and mix until combine. Careful not to over mix!! Fold in the chocolate.
  • Roll small balls (about 3.5 to 4 cm in diameter) and place them on the prepared baking tray. The mixture should be quite sticky so it may stick to your hand while rolling but try your best, you will manage! Make sure there is room between the cookies, they are going to spread!!
  • Flatten slightly with a wet spoon, put in the oven and bake for 12 to 15 minutes. The cookies will be very soft when they come out of the oven but will harden up as they cool down.
  • Leave them cooling down at least for 10 minutes before serving.

Notes

The chocolate chip will be melty and gooey for a few hours after they come out of the oven.
