Vegan Applesauce Cake

This vegan applesauce cake is a very simple sponge cake with full of applesauce. It’s light, spongy and healthy as it doesn’t contain too much oil or butter. The texture is very similar to vegan vanilla sponge cake. You could make a layer cake by doubling the amount of the ingredients (using two 7 inch cake tins).vegan applesauce cakeI had an opened jar of applesauce in the fridge that was going to expire in 2 weeks time so I took the chance to make this cake. There was just right amount of applesauce in the jar so I was very satisfied when I see it used up.
This cake is really easy to make and the making process doesn’t take a long time. It’s a good recipe for involving kids to help you as well.

You only need these simple ingredients
  • applesauce
  • oil
  • sugar
  • vanilla extract
  • apple cider vinegar
  • plain flour
  • baking powder
  • baking soda
  • salt

If you have no applesauce but have lots of fresh apples at home, you can make your own apple sauce! just chop them into small pieces and microwave to cook with a bit of water in a ceramic bowl for a few minutes. When the apple is soft, put it in a beaker and blend with an immersion blender until smooth.
Using applesauce is a good way to reduce amount of oil for cake recipes. I make cakes with applesauce sometimes to avoid using too much oil or vegan butter.

Making steps for vegan applesauce cake recipe
  1. Mix the applesauce, oil, sugar and vanilla extract in a bowl until smooth.
  2. Add in the vinegar
  3. Sift the flour, baking powder, baking soda and salt directly over the wet ingredient
  4. In the preheated oven, bake for 40 minutes (180°C, gas mark5) or until a toothpick inserted in the middle of the cake comes out clean.

Easy and spongey cake recipe with full of applesauce. It can be served decorated or as is.

Ingredients
  

  • 190 g applesauce I used sweetened but unsweetened is fine as well.
  • 62 ml oil I used sunflower oil
  • 100 g sugar white sugar or light brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 tsp apple cider vinegar
  • 185 g plain flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • a small pinch of salt

Icing glaze (optional)

  • 63 g icing sugar
  • 1/4 tsp vanilla
  • 1/2 tbsp vegan margarine
  • 1 tbsp soy milk

Instructions
 

  • Preheat the oven to 180°C (gas mark 5). Grease a 7 inch cake tin with a bit of margarine and then dust with flour. Set aside.
  • Mix the applesauce, sugar, vanilla extract and oil in a mixing bowl until well combined. The mixture should be smooth and you don't see any oiliness as everything is incorporated.
  • Add in the apple cider vinegar to the mixture and stir. Sift the flour, baking powder, baking soda and salt directly over the wet mixture and fold in to combine. Do not over mix!!
  • The mixture is quite thick that you need to spoon the cake batter into the prepared tin rather than pouring it in. Spread the batter with a spoon to make the top surface even.
  • Bake in the oven for about 40 minutes or until a toothpick inserted in the middle of the cake comes out clean. Every oven is different so you just need to check your cake when you think it's time.
  • Let the cake cool down before taking out from the tin. You can serve the cake as is or decorate with frosting or glaze.

For the Icing glaze (optional)

  • Mix the icing sugar, vanilla extract and the margarine with a folk until well combined.
  • If the mixture is thick, add a little amount of the soy milk, NOT the entire 1tbsp. Mix well to see the consistency. If it's still thick, add a bit more soy milk. If it's too runny, add more icing sugar.
  • Pour over the cooled cake and enjoy!
