This vegan baked samosas with leftover biryani is a fantastic way to use up leftovers. We enjoyed the vegan biryani on the previous day for dinner but had a quite big amount of leftover. I decided to make samosas again after my successful vegan baked samosas with leftover curry. They came out very crispy with the yummy biryani wrapped inside and went really well with plum chutney. It’s perfect to serve as a snack or a side alongside vegan pakoras, onion bhajis or salad☺ I really would like to share with you this great feeling of turning the leftover into nice tasty samosas!easy vegan samosas

Unlike the vegan baked samosas with leftover curry, I used spring roll wrappers for this recipe to make it super easy. I had some spring roll wrappers left from my vegan spring roll making so it was a good opportunity for me to use that as well.

If you haven’t got leftover biryani but have fried rice or curry, you could use that as well. Just make sure they are not too wet. For leftover curry, I recommend to add cooked potato to reduce the moisture.

Making this vegan baked samosas with leftover biryani is really easy as long as you have a leftover for the filling and spring roll wrappers for wrapping.

To make the samosas with simple steps

  1. Preheat the oven to 230°C and prepare a baking tray lined with baking paper
  2. Prepare the leftover biryani, 10 sheets of spring roll wrappers and a bowl of flour paste.
  3. Put about 2 table spoons of the leftover on a wrapper and wrap into a triangle shape. Use the flour paste to seal the last corner. Please see the instruction photos below for more details!
  4. Drop and spread 2 table spoons of oil on the prepared baking tray and place the samosas, coat each one with the oil by turning them over.
  5. Bake for 20 minutes or until it’s slightly browned and crispy.

Ingredients
  

  • 400 g leftover biryani
  • 10 sheets spring roll wrapper
  • 1 tbsp flour
  • 2 tbsp water
  • 2 tbsp oil

Instructions
 

  • Preheat the oven to 230°C (gas mark 8). Prepare a baking tray lined with baking paper.
  • Make paste with the flour and water in a small bowl. On the table, prepare the leftover biryani (cold), 8 sheets of spring roll wrappers and the flour paste.
  • Let's make samosas! This will make about 10 medium sized samosas.
