Vegan Chocolate Chip and Sultana Cake

You don’t need any special ingredients to make this delicious vegan chocolate chip and sultana cake. It’s also really easy to put all of the ingredients together! This cake is perfectly soft on the inside and pleasantly crusty on the outside. Chocolate and sultanas are a good match and they taste lovely in this soft sponge cake.

vegan chocolate chip and sultana cakeI had no plan for baking but fancied something sweet. No plan, no special ingredients. I had a look at my kitchen cupboard and figured out that I could make a vanilla cake but not in a circle cake shape, a loaf shape for a change! I didn’t have chocolate chips but dark chocolate blocks so I crushed them into small bits and add in the cake with some sultanas. 100g brown sugar in the cake is just a right amount for this cake as the chocolate and sultanas add extra sweetness to it.

What you need to make the vegan chocolate chip and sultana cake

I used light brown sugar but if you have only white sugar that works fine as well. Soy milk is the best option for making for this recipe as it curdles well when mixed with vinegar, it makes good vegan butter milk! You can used other kinds of dry fruits instead of the sultanas such as raisins, apricots, cranberries and dates.

How to make guide

This cake is super easy to make!

  1. Mix all of the wet ingredients and sugar in a large mixing bowl.
  2. Sift all of the dry ingredients and gently add to the wet. Mix with a whisk lightly and quickly for a few seconds until the mixture is just combined with no visible lumps. Careful not to overmix the batter.
  3. Fold in the chocolate and sultana and pour the batter into a loaf tin lined with baking paper.
  4. Bake for about 55 minutes at 180°C (gas mark 5) or until a toothpick inserted in the middle of the cake comes out clean.
  5. Let it cook for 15 minutes, take out from the tin and cool completely on a wire rack before serving.

Vegan Chocolate Chip and Sultana Cake

A very simple vegan loaf cake recipe with chocolate chip and sultana. Easy but delicious!

Ingredients
  

  • 255 ml soy milk
  • 1 tsp apple cider vinegar
  • 100 g light brown sugar white sugar works fine too
  • 60 ml oil I used sunflower oil
  • 1 tsp vanilla extract
  • 250 g plain flour
  • 2 tsp baking powder
  • a small pinch of baking soda
  • 1/4 tsp salt
  • 40 g sultanas
  • 70 g vegan dark chocolate chocolate chips or crushed chocolate bits

Instructions
 

  • Preheat the oven to 180°C (gas mark 5). Prepare a 9 x 5 inch loaf tin lined with baking paper. You can grease the tin with a bit of oil and dust of flour if you have no baking paper.
  • Mix the soy milk and vinegar together in a large mixing bowl and let it sit for a couple of minutes. This will make vegan butter milk.
  • Add the sugar, oil and vanilla extract into the butter milk and mix well. Set aside.
  • Sift the flour, baking powder, baking soda and salt in another bowl. Gently add the flour mixture into the wet mixture and stir with a whisk lightly and quickly for a few seconds until just combined with no visible lumps. Careful not to overmix!
  • Stir in the chocolate and sultana. Pour the batter into the prepared loaf tin and bake for about 55 minutes or until a toothpick inserted in the middle of the cake comes out clean. The baking time can slightly vary depending on how your oven usually performs so please keep an eye on your cake!
  • Leave to cool for 15 minutes, take out of the tin, cool further on a wire rack. To me, This cake tastes more delicious after cooling down completely! Keep the leftover in an airtight container up to 3 days (2 days in Summer).
