Vegan Cinnamon Crunch Cereal

This homemade vegan cinnamon crunch cereal is sugar free, oil free and gluten free – perfect for breakfast! It’s mainly made with flaxseed so it’s highly beneficial to your health while it’s crunchy delicious.

This vegan cinnamon crunch cereal is very easy to make with just 6 ingredients. The texture is similar to crackers with a bit of crumbliness and the cinnamon adds extra flavour to your breakfast. The sweetness naturally comes from the apple juice added to the cereal that allowed me to skip sugar completely!

The main ingredient is flaxseeds, which I don’t recommend to replace with any other ingredient. Flaxseed is available in many shops nowadays, I buy mine cheap from Aldi supermarket but if you can’t find it in your area, get one from an online store such as Amazon and Whole Foods shop!

Can I used different fruit juice?

Yes! You can use pineapple or mango juice, just make sure it’s 100% pure juice. I would personally not use orange juice as it’s less sweeter but if that’s what you have then you can try with that.

Can I add anything else to enhance the flavour?

Yes, you can add other ingredients such as sugar, cocoa powder and finely chopped dry dates. I prefer to keep this cereal simple as I always add chopped fruits and nuts to my bowl of cereal.

Quick making guide

  • Preheat oven to 165°C (gas mark 3). Mix the ground flax seeds, rice flour, salt, vanilla, cinnamon together in a bowl.
  • Add in the apple juice and mix and combine with your hand until a ball of dough forms.
  • Roll out the ball of dough in between 2 baking sheets (the dough is fragile and can be sticky without this method).
  • Cut into small square but don’t take them apart so much yet.
  • Bake for 10 minutes then turn it down to 275°C (gas mark 1) and bake for 30 minutes more to make them crispy.


Make sure you roll out the dough between 2 baking sheets, you will end up with a crumbly mess if you don’t! If you want to make them crispier with more golden brown colour, bake for 5 more minutes to do so.

Please allow the crunch cereal to cool completely and keep them in an air tight container. It will be nice and crispy for about a week.

Ingredients
  

  • 90 g Ground flaxseed
  • 110 g Rice flour
  • a pinch Salt
  • 1 tsp Cinnamon
  • 1 tsp Vanilla extract
  • 120 ml Apple juice

Instructions
 

  • Preheat oven to 165°C (gas mark 3). Mix the ground flax seeds, rice flour, salt, vanilla, cinnamon together in a bowl.
  • *Add in the apple juice and mix and combine with your hand until a ball of dough forms.
  • *Roll out the ball of dough in between 2 baking sheets (the dough is fragile and can be sticky without this method). The thickness is about 2-3mm (about the size of a pond coin).

  • Cut into small squares but no need to take them apart so much at this point. Don't worry if they are not cut properly, you can break them apart later.

  • Place them with the baking sheet still underneath and bake for 10 minutes then turn it down to 275°C (gas mark 1), bake for 30 minutes more to make them crispy.

Notes

*If the dough is too wet, add a little bit more rice flour, if it’s too dry, add a little bit more apple juice to adjust the consistency. The dough should look slightly crumbly and feel pretty moist but shouldn’t be sticky when you touch it. 
*Try roll out the dough thin! It will come out crispier and you will enjoy the texture more.
