Vegan Easy Lentil Burger

You can still make tasty vegan burger even if you have only basic ingredients in your kitchen☺ This vegan easy lentil burger requires simple ingredients that you might already have but comes out incredibly delicious! This is red lentil based burgers so they are quite moist on the inside and the texture is not lumpy as bean burgers.

I always used beans to make burgers, but this time I wanted to make it with a different texture and flavour. After trying a few different recipes, I finally created this perfect burger! Good thing about this recipe is that you don’t need any special ingredients that some people might not able to find. No flax seeds, no nutritional yeast and no nuts!

These are the ingredients you need

I used red lentils but you could use green lentils instead if that’s what you have, you might have to blend it to mash a bit as they are are firmer than the red ones. 3 slices of bread are for making bread crumbs (I didn’t have bread crumbs handy at the time). If you have bread crumbs already then use that, you won’t need the bread!

How to make the vegan easy lentil burger
  1. cook the lentils until soft, drain and set aside
  2. cook the vegetables and season with cumin and black pepper.
  3. pulse the rolled oats and 3 slices of toasted bread in a food processor for a few seconds until finely ground.
  4. mix everything in a bowl with the soy sauce and tomato puree and form 6 patty shaped burgers.
  5. bake them in the oven at 200°C for 15-20 minutes.

They are super delicious served in a bread bun with some sauce. We ate the burgers in a bun with tomato sauce and tahini cream and with some polenta chips on the side. which was lovely. Next time I will put some cheese to make it a cheese burger! They can be served as is with side dishes without the bread buns. If you have some leftovers keep them in an airtight container and consume within 3 days.

Vegan Easy Lentil Burger

Ingredients
  

  • 200 g dry red lentils rinsed thoroughly
  • 1/2 tsp salt
  • 1 tbsp oil for cooking the vegetables
  • 1 small onion finely chopped
  • 1 medium carrot finely chopped or grated
  • 5 medium button mushrooms finely chopped
  • 4 cloves garlic minced
  • 1 tsp cumin
  • 1/4 black pepper
  • 70 g rolled oats
  • 3 slices wholemeal bread toasted
  • 2 tbsp soy sauce
  • 1 tbsp tomato puree

Instructions
 

  • In a pot, bring water to boil (enough amount of water to cook lentils) and add the salt. Put on the rinsed lentils and cook until soft. It will take about 15 to 20minutes.
  • While the lentils are cooking, prepare the vegetables. I used a food processor to chop the vegetables finely, that was time saving!
  • Heat the oil in a frying pan and cook the vegetables for about 5 minutes. Add the cumin and black pepper and continue cooking for a minute.
  • If your lentils are cooked now, drain and set aside.
  • In a food processor, put the rolled oats and toasted bread (broken into pieces). Pulse for a few seconds until they all become finely ground.
  • Preheat the oven to 200°C (gas mark6). Prepare a baking tray lined with baking paper. Lightly grease the baking paper.
  • In a bowl (if your lentils and cooked vegetables are still hot, use a metalic or a ceramic bowl), combine together the lentils, cooked vegetables, ground oats and bread crumbs, soy sauce and tomato puree with a spoon or by hand.
  • Form 6 patty shaped burger, place them on the prepared baking tray and bake for 15-20 minutes. Do not forget the flip over halfway through the cooking!
  • Serve in a bread bun with some sauce and salad or as is with side dishes. It will make a nice sandwich as well!
