Vegan Jammy Oat Bars

This vegan jammy oat bars are crispy around the edges like cookie and soft and a little bit chewy like flapjack. The filled strawberry jam added extra deliciousness to this oaty heaven!

These are pretty simple oat bars but adding the jam in between has turned them into something more delicious and delightful! It’s very easy to make these yummy treats and you only need basics ingredients that you might already have in your kitchen 🙂

Unlike flapjack, I added sugar instead of golden syrup and used similar methods to making cookie dough but with a good amount of oats. So they don’t have the sticky kind of chewiness but soft, crumbly textures. I added peanut butter to replace some amount of margarine to make them a little bit healthier.

Ingredients needed

I usually use vegan margarine or spread but if you want to use vegan butter, that works as well. You can use any peanut butter but I recommend one with no added sugar or salt if you want to stay on a healthier side! If you don’t have strawberry jam, use any jam that you have, you might not need to shop for this recipe at all 🙂

Simple making guide
  1. Pre-heat the oven to 180°C (gas mark 4.5) and grease a 11 x 7 inch or a similar sized tin with margarine.
  2. Beat the margarine, peanut butter, sugar and vanilla extract in a mixing bowl until fluffy for about 1 to 2 minutes.
  3. Add the plain flour, baking powder and oats to the margarine mixture, mix very well.
  4. Put half the mixture into the tin and spreading evenly, press it firmly down.
  5. Spread a layer of the jam over the base and put the other half of the mixture over evenly so that the jam is completely covered.
  6. Bake for 30-35 minutes until golden brown around the edges.
  7. Allow to cool for 15 minutes and cut into squares or rectangles. Leave to cool completely before serving.

Ingredients
  

  • 100 g Vegan margarine
  • 75 g Peanut butter
  • 150 g Sugar I used caster sugar
  • 1 tsp Vanilla extract
  • 190 g Plain flour
  • 2 tsp Baking powder
  • 175 g Rolled oats
  • 150-200 g Strawberry jam or any jam of your choice

Instructions
 

  • Pre-heat the oven to 180°C (gas mark 4.5) and grease a 11 x 7 inch or a similar sized tin with margarine.
  • Beat the margarine, peanut butter, sugar and vanilla extract in a mixing bowl until fluffy and creamy for about 1 to 2 minutes.
  • Add the plain flour, baking powder and oats to the margarine mixture, mix very well. The mixture will be soft and crumbly.
  • Put half the mixture into the tin and spreading evenly, press it firmly down to the bottom of the tin and also the corners.
  • Spread a layer of the jam over the base and sprinkle the other half of the mixture over so that the jam is completely covered. This time, press gently to set the top evenly.
  • Bake for 30-35 minutes until golden brown around the edges. Allow to cool for 15 minutes and cut into squares or rectangles. Leave to cool completely before serving.

Notes

The leftovers will keep in an airtight container up to a week.
