Vegan Marble Cake

The fluffy and moist vegan marble cake is perfect for dessert or snack. You can make this cake with basic ingredients that you might already have in your kitchen!

I love marble cake! It’s a simple, vanilla and chocolate sponge cake but you see the marble pattern when you slice it, which I find it quite exciting. It’s easy to make but it takes a little more than making an ordinary loaf cake as you have to divide the batter into two to make the vanilla and the chocolate. If you are looking to make a simple, easy to crab kind of cake, this recipe is perfect for you!

It might look a bit tricky to make the marble pattern but it’s actually quite easy. The main thing to be careful with is not to work on it too much. After the batter is poured into the tin, you only need to swirl through it once with a knife or a chop stick.

Ingredients needed:

  • Plain flour
  • Corn flour
  • Baking powder
  • Baking soda
  • Brown sugar
  • Salt
  • Flax egg
  • Soya milk
  • Oil
  • Vanilla extract
  • Lemon juice or vinegar

For the chocolate swirl

Adding corn flour helps the cake to be fluffier but I imagine it could work without it, though I’ve never tried it. I usually use sunflower oil but I’ve been unable to find it in shops in the last few weeks as there’s a shortage of cooking oil. This time, I used rapeseed oil, which is almost unflavoured and it worked perfectly. You can use any unflavoured oil that you have in your kitchen. I previously added caramel extract instead of vanilla in this cake, which was also really nice.

Quick making guide:

  1. Preheat the oven to 180°C (gas mark 4.5) and grease a 8 x 4 inch loaf tin, lightly dust with flour.
  2. Sift the dry ingredients together in a large mixing bowl.
  3. Mix all of the wet ingredients in a separate bowl and add to the dry ingredients, mix until just combined without any lumps remained.
  4. Pour about 1/2 amount of the batter into another bowl and mix in 1 tbsp cocoa powder and 2 tbsp of soya milk to make the chocolate batter.
  5. You want to make the chocolate batter the same consistency as the vanilla batter. If the chocolate batter looks thicker, add a little more milk to adjust.
  6. Now you have a bowl of the vanilla batter and a bowl of the chocolate batter. Pour 3-4 table spoons of the vanilla batter into the tin and spread it evenly to make a thin layer.
  7. Then put 3-4 table spoons of the chocolate batter on top of the vanilla layer in the tin, gently spread over. careful not to press to hard, you don’t want to mix them yet!
  8. Repeat the steps to make layers of the vanilla and the chocolate until no more batter is left.
  9. Using a knife or a chopstick, swirl around the batter once. You could do twice but the batter could get mixed too much and might not show clear swirl pattern.
  10. Sprinkle some chocolate chips (optional) on top and bake for 60 to 70 minutes until a toothpick inserted in the middle of the came comes out clean.
  11. Allow it to cool completely before serving.

After you mix the dry and wet ingredients together, you should get on with the rest quickly while the lemon juice/vinegar is reacting with the baking powder and soda in the batter, which helps the cake to be spongy. When making the layers of the vanilla and chocolate in the tin, you don’t need to spread the batter so neatly from corner to corner, spreading roughly does the job!

  • 12 g Baking powder
  • a pinch Baking soda
  • 150 g Brown sugar
  • a pinch Salt
  • 1 *Flax egg Please see the note below
  • 200 ml Soya milk
  • 110 ml Oil sunflower, rapeseed, vegetable oil etc
  • 2 tsp Vanilla extract
  • 1 tbsp Lemon juice or vinegar

For the chocoate batter

  • 2 tbsp Cocoa powder
  • 3-4 tbsp Soya milk

Notes

*To make the flax egg, mix 1 tbsp of ground flaxseed and 3 tbsp pf hot water in a bowl and let it sit for 3-5 minutes until it becomes gloopy textured liquid.
*After you mix the dry and wet ingredient to make the batter, please try work on the rest quickly! If taking too long, the cake could come out a little dense.
