Vegan Mince Pies

The season for us to start shopping for Christmas food has come again. Although it has become quite easy to find vegan food in the last few years in London, I still find it a little hard to find vegan mince pies with affordable price. So I decided to make my own ones instead of spending time to look for them. They came out just like proper mince pies, crusty shells with sweet mincemeat in them but less sweeter and healthier than shop bought ones☺

Vegan Mince Pies

I actually wanted to make them very quickly with ready rolled shortcrust pastry but I forgot to get it from the shop. So I made my own pastry with flour and sugar. I added a very small amount of cold water to make it stick together into dough.

What you need to make these vegan mince pies

If you want to make these quickly, I suggest to use ready rolled pastry instead! However, it’s much cheaper and healthier to make your own pastry, also it’s pretty easy☺

Making process
  1. In a bowl, rub the butter into the flour until crumbly texture. Stir the sugar and mix. Drop 1 tea spoon of cold water and try form a ball of dough. You do not need to knead, just put the flour together into a ball.
  2. If your flour mixture is still dry, add another tea spoon of cold water and see if you can form a ball. When adding the cold water, please add little by little!
  3. Preheat the oven to 200°C (gas mark 6). Grease your pie tin.
  4. Spread some flour on your work surface to prevent sticking. Roll out half the pastry and cut circle shapes with a larger cookie cutters. Line the pie tin with the circles and put in 1 tsp of mincemeat.
  5. Roll out the remaining pastry and cut circles with the smaller cutters to make the tops. Place them on top of each pie and gently press around the edge to seal. Make a few tiny holes on top for the air to come out while baking.
  6. Bake for 20-25 minutes or until golden brown. When they come out from the oven, leave in the tin to cool.

You can cut the tops into different shapes such as stars or hearts instead of the circles. A little sprinkles of icing sugar on top would make them look gorgeous as well☺

Very easy vegan mince pie recipe with 4 ingredients!

Ingredients
  

  • 250 g plain flour
  • 120 g vegan spread or butter
  • 50 g granulated sugar caster sugar is fine as well
  • a jar mincemeat I used about 280 g out of a jar of 411 g mincemeat

Instructions
 

  • In a bowl, rub the butter into the flour until crumbly texture. Stir the sugar and mix. Drop 1 tea spoon of cold water and try form a ball of dough. You do not need to knead, just put the flour together into a ball.
  • If your flour mixture is still dry, add another tea spoon of cold water and see if you can form a ball. When adding the cold water, please add little by little and allow a few seconds for the flour mixture to absorb the water before deciding to add more. You don't want to make the dough too soft and sticky!
  • Wrap the ball of dough in clingfilm and let it sit in the fridge for 30 minutes.
  • Preheat the oven to 200°C (gas mark 6). Grease your pie tin.
  • Spread some flour on your work surface to prevent sticking. Roll out half the pastry and cut circle shapes with a larger cookie cutters. Line the pie tin with the circles and put in 1 tsp of mincemeat. 
  • Roll out the remaining pastry and cut circles with the smaller cutters to make the tops. Place them on top of each pie and gently press around the edge to seal. Make a few tiny holes on top for the air to come out while baking.

  • When they come out from the oven, leave in the tin to cool and dust the top with icing sugar if you wan to.
