Vegan Orange Cake

This soft and moist vegan orange cake is perfect for everyday dessert or snacks! The glaze on top of the cake adds an extra citrusy flavour and moisture to the sponge.

This orange cake is very simple and delicious, moreover, it doesn’t cost much to make as you only need a few everyday ingredients. If you are interested in this recipe, go check your kitchen to check if you have everything you need to make this cake!

Ingredient list

For the cake

  • Plain flour
  • Corn flour
  • Baking powder
  • Baking soda
  • Sugar
  • Salt
  • Sunflower oil or any other unflavoured oil
  • Orange juice
  • Apple cider vinegar
  • Vanilla extract

  • Icing sugar
  • Orange juice

I drizzled a good amount of the glaze over the cake that made it extra moist. When I cut the cake, I could see the sponge soaked up the glaze and I enjoyed the texture of the sponge with syrupy juice in my mouth! If you don’t want to make the cake too moist, you could just brush the glaze thinly or just skip it. However, I highly recommend my way though!

Quick making guide

  • Mix and sift the flour, corn flour, baking powder, baking soda, salt and sugar in a bowl.
  • Mix orange juice, oil, vinegar and vanilla extract together in a large mixing bowl.
  • Add the dry to the wet mixture and mix until combined without over mixing.
  • Pour the batter into a greased 8 inch cake tin.
  • Bake for 30-35 minutes in the preheated oven (190°C, gas mark 5). Adjust the baking time according to your oven.
  • Leave the cake to cool completely and make the glaze in the meantime.
  • Mix the icing sugar and orange juice in a bowl stir vigorously.
  • Pour the glaze over the cool cake. Pop in the fridge for a few minutes to allow the glaze to harden a bit.

Ingredients
  

For the cake

  • 160 g Plain flour
  • 30 g Corn flour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 100 g Sugar I used caster sugar
  • a pinch Salt
  • 80 ml Oil I used sunflower oil
  • 240 ml Orange juice
  • 1 tbsp Apple cider vinegar
  • 1 tsp Vanilla extract

For the glaze

  • 100 g Icing sugar
  • 2 tbsp Orange juice

Instructions
 

For the cake

  • Preheat the oven to 190°C (gas mark 5) and grease a 8 inch cake tin and dust with flour for the cake to come out easy when baked.
  • Mix and sift the flour, corn flour, baking powder, baking soda, salt and sugar in a bowl.
  • Mix orange juice, oil, vinegar and vanilla extract together in a large mixing bowl.
  • Add the dry to the wet mixture and mix until combined without over mixing.
  • Pour the batter into the cake tin. and bake for 30-35 minutes in the oven. Adjust the baking time according to your oven.
  • Leave the cake to cool down for 30 minutes and take out from the tin. Allow it to continue cooling completely before using the glaze.

For the glaze

  • Mix the icing sugar and orange juice together in a bowl and stir vigorously.
  • Pour the glaze over the cool cake. Adjust the amount of the glaze according to your liking.
  • Pop in the fridge to let the glaze harden a little before serving.
