Vegan Quick Potato Salad

This vegan quick potato salad is very easy to prepare with few ingredients. It’s flavourful and delicious, moreover budget friendly!! If you haven’t got the same vegetables as this recipe, you can use what you have in your fridge but make sure you put potatoes though! Have no sweet potato? Then you can use ordinary potato as a replacement.

I chose to add the vegetables shown in this recipe because that’s what I had. If I had no spinach, I would have added broccoli or kale, if I had no edamame beans I would have used garden peas. However, I highly recommend to not to omit the scallion as it gives a really good flavour.

The dressing in this salad is amazingly nice considering that I made it up in 2 minutes! It has oil but much less oil than mayonnaise. If you are looking to use oil-less dressing please have a look at my another potato salad recipe

Ingredients for this recipe
Dressing
  • Oil
  • Soy milk
  • Garlic puree
  • Lemon juice
  • Dijon mustard
  • Salt & black pepper
How to make Vegan Quick Potato Salad
  1. In a pot with boiling water, cook the potato and sweet potato until soft. Drain and put back in the pot on a low heat for about 15 seconds just to get rid of the excess moisture. Stir constantly during this process to avoid sticking.
  2. Transfer the cooked potato to a ceramic bowl and leave to cool to room temperature.
  3. Put all of the dressing ingredients together in a bowl and mix vigorously until you have a little bit thick consistency but not thick as mayonnaise. Set aside.
  4. When the potato is cool, add in the apple, edamame beans, scallion and spinach, and mix well.
    Pour in the dressing and mix well until everything is nicely combined.

Healthy and easy vegan potato salad recipe

Ingredients
  

  • 2 medium potatoes chopped with or without the peel
  • 1 large sweet potato chopped with or without the peel
  • 1 small apple cut into small size slices
  • 1 handful frozen edamame beans defrosted and drained. it can be replaced with garden peas.
  • 50 g spinach washed and *wilted with hot water
  • 1 scallion finely chopped

Dressing

  • 2 tbsp oil I used sunflower oil
  • 1 tsp soy milk
  • 1 tsp garlic puree
  • 1 tsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Notes

*Place the spinach in a bowl and pour hot water in. Let the spinach sit for 1o seconds and drain.
