Vegan Red Pepper Sauce Pasta

This vegan red pepper sauce pasta is very simple to make, delicious and packed with nutrients. It has a little sweetness from the red pepper but the flavour of the red pepper doesn’t overpower the entire dish. It would be a surprise for red pepper haters because they will probably not notice!

We had 6 red peppers sitting in the fridge over the Christmas time and a couple of those were looking old. I imagined pasta with red pepper sauce that could fool my son who dislikes red pepper but loves pasta dish as it might look like tomato sauce pasta. So it gave it a go.

Ingredients for the Vegan Red Pepper Sauce Pasta

<For the red pepper sauce>

  • 1 tbsp oil for cooking
  • 2 medium red pepper
  • 1 medium celery
  • 100 g  tofu
  • 30 g vegan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp tomato puree
  • 1 tsp garlic puree

<For the rest>

  • 250 g dry pasta
  • 1 tbsp oil for cooking vegetables
  • vegetables of your choice
  • 1 medium onion
  • 4 cloves garlic minced
  • 1 tsp paprika
  • 1 tbsp soy sauce
How do I make this?
  1. Heat the oil in a frying pan and cook the red pepper and the celery until cook and slightly caramelised.
  2. Put the cooked red pepper and celery with the rest of the ingredients for the sauce in a beaker and pulse with an immersion blender until smooth. Set aside.
  3. Cook the pasta according to the instructions of the package.
  4. While the pasta is cooking, heat the oil in the same frying pan and cook the vegetables until soft and slightly caramelised.
  5. Stir in the soy sauce, cook for another minute and then add in the red pepper sauce. Season with the salt and black pepper as needed. Continue cooking on a low heat for a minute or until the sauce is heated thoroughly.
    Add in the cooked pasta and mix everything together well.

I cooked the red peppers in a frying pan to save time but you can roast them instead as well. Tofu can be firm or silken, you will get a different consistency but both of them should work fine! I used medium firm one.

The full recipe below shows the vegetables that I used to mix with the pasta but you can choose any veggies that you like. However, I highly recommend to add onion and garlic to this recipe. vegan red pepper sauce pasta

As I guessed, my son enjoyed it and didn’t even ask what sauce it was. I did not tell him until he finished eating his meal, we was surprised☺

Ingredients
  

For the red pepper sauce

  • 1 tbsp oil for cooking
  • 2 medium red pepper chopped
  • 1 medium celery chopped
  • 100 g firm tofu
  • 30 g vegan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp tomato puree
  • 1 tsp garlic puree

For the rest

  • 250 g dry pasta any shapes
  • 1 tbsp oil for cooking vegetables
  • 10 medium button mushrooms sliced
  • 1/2 medium green pepper chopped finely
  • 1 medium red onion chopped
  • 4 cloves garlic minced
  • 1 medium celery chopped
  • 1/3 large broccoli chopped
  • 1 tsp paprika
  • 1 tbsp soy sauce
  • salt and black pepper as needed

For topping (optional)

  • 30 g vegan cheese chopped very small

Instructions
 

  • Heat the oil in a frying pan and cook the red pepper and the celery until cook and slightly caramelised.
  • Put the cooked red pepper and celery with the rest of the ingredients for the sauce in a beaker and pulse with an immersion blender until smooth. When it's blended and smooth you still see very tiny bits of red pepper but don't worry about that! Set aside.
  • Cook the pasta according to the instructions of the package. Put in the broccoli to cook at the same time. You need to take out just the broccoli when it's cooked al dente and leave the pasta boiling until cooked.
  • While the pasta is cooking, heat the oil in the same frying pan and cook the vegetables, except the broccoli until soft and slightly caramelised. Add in the broccoli and keep cooking for a minute.
  • Stir in the soy sauce, cook for another minute and then add in the red pepper sauce. Season with the salt and black pepper as needed. Continue cooking on a low heat for a minute or until the sauce is heated thoroughly.
  • Add in the cooked pasta and mix everything together well. Serve with some sprinkles of vegan cheese on top (optional).
