Vegan Spinach and Basil Pesto

This vegan spinach and basil pesto is super easy to make, healthy and delicious. You can add this pesto sauce to various things such as pasta, potato, pizza and sandwich.

I bought a big packet of spinach few days ago for my curry cooking but had still a lot of it left. There was a still good amount left in the bag even after using it for the curry, salad and sauté.
I decided to make pesto sauce to use up all of the spinach. It would be a good way to add more nutrients to the sauce as well.

To make this vegan spinach and basil pesto you only need: spinach, basil, oil, nuts (I used mixed nuts including almonds, brazil nuts, hazel nuts and walnuts as it was all I had), garlic, lemon juice, nutritional yeast, salt and black pepper. You just need to put everything in a beaker and pulse with a hand blender until smooth and saucy. You can do this with a food processor as well.

The pesto sauce came out delicious with a good flavour of the spinach and the basil. I made pasta dish with the sauce and we all enjoyed it☻

If you have some spinach in the fridge I recommend you try this recipe. It’s so easy and yummy! Alternatively you can use kale instead of spinach if that’s what you’ve got☺

Vegan Spinach and Basil Pesto

Course sauce
Servings 1 cup

Ingredients
  

  • 80 g fresh spinach washed and drained
  • 30 g fresh basil washed and drained
  • 50 g olive oil sunflower oil or vegetable oil is fine too
  • 1 clove fresh garlic 1 tsp of garlic puree is fine too
  • 30 g mixed nuts *avoid peanuts
  • 1 tsp lemon juice
  • 1 heap tbsp nutritional yeast
  • 1/2 tsp salt
  • 1/8 tsp black pepper

Instructions
 

  • Put all of the ingredients in a beaker and pulse with a hand blender until smooth and saucy. You can used a food processor to do this if you haven't got a hand blender.

Notes

You can used nuts such as brazil nuts, hazel nuts, walnuts and pine nuts. Please avoid peanuts as the flavour could be overpowering and it could make the sauce too thick.
