Instructions
Boiled the potato until soft to pierce with a folk. Drain and put back in the pot that was used for boiling the potato. *Put on the lowest heat and keep stirring for 20 seconds to let the excess water evaporates. Turn off the heat.
Mash the cooked potato with a masher or a folk. It doesn't have to be mashed very smooth, you can leave some bits. Add in the leftover patty filling and mix well. Add some salt and pepper to taste.
Preheat the oven to 220°C (gas mark 7). Grease a baking tray with 2 tbsp of oil. Make sure all of the surface is covered with oil. Put it in the oven.
Prepare some bread crumbs in a bowl and a plate to put coated croquettes. Pick up about 2 tbsp of the potato mixture with your hand and make a croquette shape. Put in the bread crumbs and gently roll around to coat. Put it on the plate. Repeat the step to make more croquettes.
Take the baking tray with hot oil out of the oven and place the croquettes. Bake for 25-30 minutes until golden. **Don't forget to turn over halfway through the cooking!
Notes
*We don't want to make the croquette filling too wet so this step is necessary!**I like them golden all round so I turn over few times!
