Vegan Sausage

This vegan sausage is very easy to make, healthy and flavourful. It’s made of simple ingredients such as onion, oats, sunflower seeds, chickpea flour and red kidney beans.

I was wondering if I could make tasty vegan sausage that takes less time and doesn’t require special ingredients. Then I thought maybe I could adapt my vegan meatball recipe to make the sausage.
In order to change the texture of the meatball which is a bit crumbly, I mixed in chickpea flour and vegan margarine to add more moisture. It also helped the sausage to hold together well.

Vegan sausage

Easy vegan sausage recipe made with simple ingredients

Ingredients
  

  • 1 (net weight 400 g) can red kidney beans washed and drained
  • 1 small onion chopped
  • 45 g rolled oats use gluten free oats if you prefer
  • 45 g sunflower seeds
  • 1 clove garlic
  • 1 tsp dry herb
  • 1 tbsp tomato puree
  • 1 tbsp soy sauce
  • 2 tbsp vegan margarine
  • 1 heap tbsp chickpea flour
  • 1/3 tsp salt adjust the amount to suit your liking
  • 1/8 tsp black pepper adjust the amount to suit your liking

Gravy for 2-3 people (optional)

  • 1 medium onion sliced thinly
  • 6 medium mushrooms sliced thinly
  • 2 cloves garlic
  • 2 tbsp soy sauce
  • 1 tbsp tomato puree
  • 400 ml vegetable stock
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1 heap tbsp corn flour mixed with 1 1/2 tbsp of water
  • 1/2 tsp dry herb

Instructions
 

  • In a frying pan, saute the chopped onion until transparent.
  • Put the oats, sunflower seeds, garlic and the fried onion in a food processor. Pulse until oats are looking very finely chopped with some ground bits. Do not ground the oats completely, we need leave some texture! Transfer the mixture in a mixing bowl.
  • Preheat the oven to 177°C (gas mark 4). Prepare a baking tray lined with a baking sheet and spread some oil to grease.
  • Add the dry herb, tomato puree, soy sauce, margarine, the chickpea flour, salt and black pepper into the oats mixture and mix until combined with your hand. The consistency should be firm so that you can form the sausage shape easily. If it's too soft add some more chickpea flour.
  • Form the sausage shape. You should be able to make 9 or 10 sausages, although if you make it bigger like hot dog sausage you will make less.
  • Place the sausages on the prepared baking tray. Bake for about 20 minutes or until nicely browned on both sides. Do not forget to flip over halfway through cooking.

Gravy (if you are making)

  • In a frying pan saute the onion, mushrooms and the garlic until cooked.
  • Mix in the soy sauce and the tomato puree and continue frying for about 1 minutes.
  • Pour in the vegetable stock. Add the dry herb, salt and the black pepper to season. Cook on a low heat for about 5 minutes.
  • Pour in the corn flour and water mixture and immediately stir. Keep stirring until the sauce thickens. If you prefer very thick sauce add more corn flour .
