As I mentioned in one my my post ‘CREAM FILLED VEGAN VANILLA CUPCAKES‘, I absolutely adore sweets with filling inside them. I made this cute little vegan apple filled cookies a number of time last year and thought about sharing the recipe with you.
The recipe is very easy to follow and you only need a few simple ingredients! Make sure you have the ingredients below before you start trying the recipe.
For the pastry
- Orange juice (or pineapple juice, just be sure it’s smooth and100% pure)
- Sunflower oil (or any other unflavoured oil)
- Baking powder
- Vanilla extract
- Sugar
- Flour
For the apple filling
- Apples
- Sugar
- Cinnamon
Yes, you need only these ingredients to make these yummy treat. Perhaps you already have them in your kitchen and can try out the recipe straightaway?!
I haven’t tried with different fillings yet but you could try with the following.
- Chocolate
- Cooked pineapple
- Fruit jam
- Dates
How to make Vegan apple filled cookies
- Start with making the cookie dough! In a mixing bowl, mix the orange juice, oil and vanilla extract together.
- Add in the flour, baking powder, salt, sugar and mix to combine well until it forms a ball of dough. Cover and let it rest for at least 30 minutes.
- While the dough is resting, make the filling. Put the grated apple with sugar and cinnamon in a sauce pan and place on a cooker on a low-medium heat.
- Mix the filling mixture often while cooking for 10-15 minutes. Allow it to cool completely.
- Divide and roll the rested dough into a few balls. I made 14 balls but this depends on what size of cookies you would like to make.
- Roll one of the dough balls on the table with a rolling pin (I used my palm) into a circular shape.
- Put about one tea spoon of the filling in the middle and stick all around the edge together to seal. Repeat the steps to make the rest.
- Place them on a baking tray lined with baking paper with the sealed sided facing up and bake for 15 to 20 minutes in the preheated oven (176°C, gas mark 4). until slightly golden.
- After they cool down, dust with some icing sugar (optional).

Ingredients
For the pastry
- 80 ml Orange juice Pineapple juice also works
- 80 ml Sunflower oil or any other unflavoured oil
- 250 g Plain flour
- 1 tsp Baking powder
- 1 tbsp Sugar
- a pinch Salt
- 1 tsp Vanilla extract
For the filling
- 2 large Apples
- 70 g Sugar
- 1 tsp cinnamon Add more for stronger flavour

Notes
*Please make sure you cool down the filling completely. Putting warm filling would give you a soggy pastry mess!
