vegan simple bean burger

I eat shop bought vegan burgers when I’m short on time as they are convenient yet tasty but to be honest, I think they are a little too costly. So I make my own one with a tin of beans that I have in my kitchen cupboard, usually kidney beans or mixed beans. I find the mixed beans give nicer texture to the burger so it’s more enjoyable when eating.

Quick making guide

  1. Chop the onion and carrot into small pieces and cook in a frying pan with a bit of oil for 2 minutes. Add the smoked paprika, cumin and garlic puree, continue cooking until slightly caramelised.
  2. Mash the mixed beans with a folk and mix in the cooked vegetables, bread crumbs, soy sauce, tomato puree, garlic puree, salt and pepper. Combine well with your hand.
  3. Add the water. If the mixture is looking dry, add more water but a little at a time. Make 4 patty shapes and brush some oil on both sides. Bake in the preheated oven (200°C gas mark 6) for 20-25 minutes. Flip over half way through the cooking.

I find that using a plate makes mashing the beans easier with a folk. I added 2 tbsp water to adjust the consistency of the mixture. The amount of water may differ depending on the type of bread crumbs you are using. The burger is great in a bread roll or a bun with some fresh salad or just on its own with sauce of your choice. I often serve with tomato sauce and vegan mayonnaise as they go really well with the burger.
