Vegan Chocolate filled Oat Bars

The vegan simple oat bars are filled with homemade chocolate spread. These not too sweet finger shaped bars are made with basic ingredients and lots of oats! perfect for breakfast, snack or dessert.

I buy oat bars filled with apple or jam from shops sometimes but then I thought it’s time to make my own version to create healthier ones, especially for my son who loves oat bars. I made it intentionally not so sweet as I wanted to have it as a breakfast munch.

The ingredients that I use for these bars are very basic that perhaps you might already have in your kitchen. I used sunflower oil for the dough so you don’t even need vegan margarine! The chocolate filling is my homemade vegan chocolate spread, which is also very easy and simple to make.

Ingredients needed
  • Rolled oats
  • Plain flower
  • Sugar
  • Baking powder
  • Boiled water
  • Sunflower oil
  • Vanilla extract
  • Vegan chocolate spread

There are other things that you can use for the filling such as vegan chocolate, date paste and fruit jam. You can use any unflavoured oil, it doesn’t have to be sunflower oil 🙂

Quick making guide
  • Mix the oats, plain flour, baking powder and sugar together in a bowl.
  • In a separate bowl, mix the boiled water, oil and vanilla extract together.
  • Add the wet to the dry ingredients and combine well to form a soft but non sticky dough.
  • Divide the dough into 16 pieces and roll each one into a sausage shape.
  • With a rolling pin or a palm of your hand, flatten each piece. You now have 16 oval shaped flattened pieces.
  • Put some chocolate spread in the middle of each piece and fold the edges to cover the filling, close the opening by pinching with your fingers.
  • Press each one with a folk gently and prick some holes.
  • Bake in the preheated oven (180°C gas mark 4.5) for 25-30 minutes. Flip over halfway through the baking to make both sides golden brown.
  • Let it cool down completely before serving.

Step to put the chocolate filling in might take a little while but it’s not difficult:) I used a cake decoration pipe and squeeze out a line on each piece, that makes it a lot easier but of course you can use a spoon to do that as well!

They are great for breakfast, snack, dessert and packed lunch too. Any leftovers will keep in an airtight container at room temperature up to 3 days. Refrigerate for longer storage.

Ingredients
  

  • 50 g Rolled oat
  • 200 g Plain flour
  • 1 tsp Baking powder
  • 50 g Sugar
  • 100 ml Boiled water
  • 50 ml Oil I used sunflower oil
  • 1 tsp Vanilla extract
  • 60 g Vegan chocolate spread Please see the note below

Instructions
 

  • Preheat the oven to 180°C (gas mark 4.5) and line a baking tray with baking paper.
  • Mix the oats, plain flour, baking powder and sugar together in a bowl. In a separate bowl, mix the boiled water, oil and vanilla extract together.
  • Add the wet to the dry ingredients and combine well to form a soft but non sticky dough. If it's sticky and unmanageable, add a little more flour.
  • Divide the dough into 16 pieces and roll each one into a sausage shape. With a rolling pin or a palm of your hand, flatten each piece. You now have 16 oval shaped flattened pieces.
  • Put some chocolate spread in the middle of each piece and fold the edges to cover the filling, close the opening by pinching with your fingers. Press each one with a folk gently and prick some holes.
  • Place on the prepared baking tray with enough space in between and bake for 25-30 minutes. Flip over halfway through the baking to make both sides golden brown.

Notes

You can make vegan chocolate spread easily at home. Watch the how to video!
You can try making these without oats if you have no oats at home. Just replace the amount with the plain flour! (they won’t be oat bars though).
