I remember how surprised I was to know bourbon biscuits are vegan when I was still new to veganism years ago. I love sandwich cookies in general so they quickly became my favourite. In this recipe the yummy biscuits turn into delicious chocolate truffles that no one probably can tell the main ingredients. The cream from the bourbon biscuits hold the truffles really well and gives a lovely chocolaty flavour.

Yes, you only need these 3 ingredients and you will have nice dessert! You could use Oreo cookies or any other sandwich cookies if you prefer. I used 70% dark chocolate but feel free to go for different one or even white chocolate, just make sure it’s vegan☺

Making guide

This is a really easy recipe, you won’t fail! Start with crushing the biscuits in a bowl. We want to leave some texture here so leave some bits as well. Then add 1 tbsp soy milk and mix with your hand until it becomes doughy. If it’s still dry add a little bit more milk. If it’s gone too wet add one or two more biscuits (crushed) to get the consistency. Make 10-12 balls with the dough. In a separate ball crush 2 biscuits and coat the balls with that. Let them sit in the freezer for 15 minutes. This will make it easier to coat with the chocolate. Melt the chocolate in a small bowl in a microwave and coat the chilled balls with that. Place them on a plate lined with baking paper. Put in the fridge to harden the chocolate. Serve and enjoy☻ Store leftovers in an airtight container up to 4 days.

Ingredients
  

  • 160 g bourbon biscuits
  • 1-2 tbsp soy milk
  • 2 more biscuits for coating
  • 50 g vegan dark chocolate

    Instructions
     

    • Crush the biscuits with your hands in a mixing bowl or using a food processor, make sure you leave some bits for the texture.
    • Add in the milk, mix with your hands until it becomes doughy and make 10-12 small balls and place them on a plate.
    • In a small bowl, crush 2 biscuits and coat the balls with that. Let them sit in the freezer for 15 minutes.
    • In a bowl, melt the chocolate in a microwave. Coat the chilled balls with the melted chocolate and place on a place lined with baking paper (to avoid sticking to the plate).
    • Put in the fridge until the chocolate hardens. Store the leftovers in an airtight container in the fridge up to 4 days.
