Vegan Asian Style Fried Noodles

I love easy cooking like this vegan Asian style fried noodles! You can knock up almost any vegetables and noodles together with some soy sauce and other every day seasoning. It’s simple but very flavourful and full of yumminess of the Asian style sauce.

vegan fried noodlesI get my noodles from a local Chinese shop and this flat noodles are one of our favourites. It takes only 6 minutes to cook and you can cook them in stir fry or serve as is with other stuff or serve cold in Summer time, they are really versatile! However you can use different types of noodles for this recipes as long as they are good for frying! You can also use pre-cooked ones as well.

What you need to make the Vegan Asian Style Fried Noodles
  • noodles
  • onion
  • garlic
  • ginger
  • mushrooms
  • carrot
  • red pepper
  • green beans
  • edamame beans
  • firm tofu
  • spring onion

For the sauce, you need

  • vegetable stock
  • soy sauce
  • vinegar
  • mirin
  • golden syrup
  • corn starch
  • tahini

The vegetables I have listed here are what I had at the time so please feel free to replace some of them with something else if you want to, although I would say onion, garlic and ginger are a must for this recipe. For the sauce, if you don’t have mirin, add a little bit more golden syrup or replace the golden syrup with maple syrup for a healthier option. I added tahini to the sauce but you can use peanut butter instead.

To make this dish is super easy!
  1. cook the noodles and set aside.
  2. prepare the sauce in a bowl by mixing all of the sauce ingredients and set aside.
  3. fry the vegetables and tofu and pour in the prepared sauce, let it simmer for a minute.
  4. add in the cooked noodles and stir to combine well, cook for 2 minutes.
  5. serve with a sprinkle of sesame (optional).

It’s important to let the sauce and vegetable simmer (step3). The sauce will thicken and the noodles get coated nicely when they are combined together. Please check out the fill recipe below for the detailed instructions!

Vegan Asian Style Fried Noodles

Easy fried noodle recipe with vegetables and tofu. Simple and delicious!

Ingredients
  

  • 240 g dry noodle I used flat shape noodles from a Chinese shop
  • 1 tbsp oil I used sunflower oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 tsp ginger minced
  • 6 medium button mushrooms sliced
  • 1 medium carrot cut into thin strips
  • 1/2 medium red pepper cut into thin strips
  • 1 handful green beans I used frozen one
  • 1 handful edamame beans I used frozen one, defrosted
  • 200 g firm tofu cut into cubes
  • 2 spring onion chopped finely

For the sauce

  • 170 ml vegetable stock
  • 4 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tbsp mirin
  • 1 tsp golden syrup
  • 1 tbsp corn starch
  • 1 tbsp tahini
  • roasted sesame for topping (optional)

Instructions
 

  • Cook the noodles as instructed at back of the package. Set aside.
  • Prepare the sauce. In a bowl, mix all of the sauce ingredients. Set aside.
  • Heat the oil in a frying pan and cook the garlic, ginger, onion, mushrooms, carrot, and red pepper until they are soft and fragrant. Add in the green beans, edamame beans and tofu, continue cooking for 2 minutes.
  • Pour in the prepared sauce and add in the spring onion and mix everything well, let it simmer for a minute. It will start thickening a little because of the corn starch.
  • Add in the cooked noodles and stir to combine. Cook for a couple minutes until everything is mixed nicely and heated through.
  • Serve with sprinkle of roasted sesames.

Notes

You can serve this with chilli sauce on the side if you want to.
