Vegan Fried Rice with Scrambled Tofu

I’ve been vegan for quite a few years now but sometimes still miss eggs (let me be honest..) I used to enjoy eating fried rice with scramble eggs at a Chinese restaurant where I worked as a teenager.
When I made this vegan fried rice with scrambled tofu, it made me satisfied. It looked like the one I used to eat and tasted so delicious! It’s just so easy to make with simple ingredients, it’s become one of my on the go recipes☺

Vegan Fried Rice with Scrambled Tofu

The vegetables I used for this recipe can be replaced with different veggies. Use long grain rice if you have no basmati rice. You could add leek, bean sprouts, aubergine or zucchini if you want to. Just make sure you stick to the rest of the ingredients!

The ingredients you need
  • 1 tbsp oil for cooking
  • 200 g firm tofu
  • 1/4 tsp turmeric
  • 1 tbsp soy sauce
  • for the rest
  • 200 g basmati rice
  • 1 tbsp oil for cooking
  • 6 medium button mushrooms
  • 1/2 medium green pepper
  • 1 carrot
  • 2 small onions
  • 4 clove garlic minced
  • 100 g cabbage
  • 1 tbsp fresh coriander
  • one handful froze edamame beans
  • 1/2 tsp Cajun seasoning
  • 2 tbsp soy sauce
  • 1/4 tsp black pepper

I imagine some of you are not familiar with Cajun seasoning is a mixture of some spices and herbs that are used for Mediterranean or Indian cooking. You can purchase it at supermarkets or small Turkish shops and it is pretty cheap. I paid only £0.49 at Lidl.

How to make Vegan Fried Rice with Scrambled Tofu
  1. Cook the basmati rice according to the instructions on the package. When cooked, drain and set aside.
  2. Make the scrambled Tofu. Heat the oil in a frying pan and add the tofu by breaking with your hand. Cook the tofu for about 3 minutes and add turmeric, stir and then add in the soy sauce. Stir fry for a minute and transfer to a small bowl. Set aside.
  3. In a frying pan or a wok, heat the oil, cook the mushrooms, green pepper and carrot, and fry them until mushrooms are slightly caramelised.
  4. Add in the onion, garlic and cabbage, and cook until onion is transparent. Put in the coriander and edamame beans, cook for a minute.
  5. Add in the scrambled tofu and stir, then add the cooked rice. Mix and stir fry until everything is nicely incorporated.
  6. Stir in the Cajun seasoning, salt and black pepper and cook for about 2 minutes.

Ingredients
  

For scrambled tofu

  • 1 tbsp oil for cooking
  • 200 g firm tofu
  • 1/4 tsp turmeric
  • 1 tbsp soy sauce

for the rest

  • 6 medium button mushrooms sliced
  • 1/2 medium green pepper chopped
  • 1 carrot chopped
  • 2 small onions chopped
  • 4 clove garlic minced
  • 100 g cabbage chopped
  • 1 tbsp fresh coriander chopped small (optional)
  • one handful froze edamame beans (defrosted) you can use garden peas or green beans instead
  • 1/2 tsp Cajun seasoning
  • 2 tbsp soy sauce
  • 1/4 tsp black pepper

Instructions
 

  • *Cook the basmati rice according to the instructions on the package. When cooked, drain and set aside.

Notes

*I recommend to cook the rice first and leave to cool before adding to the vegetables. If you have leftover rice, it will be good one to use as well.
