Vegan cauliflower wings

When I was in the local market the other day I bought a big fresh cauliflower. To be honest I don’t so much care about cauliflower since I’m not a big fan of it but then I thought about my son always enjoys eating cauliflower dish, which we hadn’t had for a long time.

I wanted to make something different with the cauliflower, not a type of casserole dish that we often cook..

When I looked on google to get some ideas, an image of what it looks like a plate of chicken wings caught my eyes. They are made of cauliflower and looked so yummy! I remember fried chicken that my mum cooked for dinner when I was a child that was one of my favourites and I do miss them sometimes even though I’ve been vegan for a quite few years now.

I made this vegan cauliflower wings and they came out pretty well. It was crunchy outside and juicy inside that was even tastier with the yogurt sauce (in the picture). I made it non-spicy for my son but if you like a bit of kick in the flavor, you could add some chilli powder in the batter!

Ingredients

  • 1 medium size cauliflower
  • 94 g plain flour you can use chickpea flour for a gluten-free version
  • 180 g soy milk or any other plant based milk
  • 60 g water
  • 1 tsp garlic paste or fresh garlic minced
  • 1 1/2 tsp paprika powder
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 120 g breadcrumbs I used golden breadcrumbs from a local shop

Instructions

  • Preheat the over to 177° (gas mark 4)
  • Carefully cut the cauliflower into bite-sized florets.
  • In a large bowl, combine the plain flour, soy milk, the water, the garlic power, the paprika powder, the salt, and the black pepper. Stir until well combined.
  • Dip the florets into the batter, so they're completely coated.
  • Roll them in the breadcrumbs. Skip this step for a gluten-free version. However, You will get a crispier result with the breadcrumb coating.
  • Line a baking sheet with a greased parchment paper and lay the cauliflower florets on the baking sheet. Don't put them on top of each other. Bake for 30-35 minutes until golden crispy. Make sure you turn them over in the half way. If they are not crispy yet bake for 5 or 10 more minutes until you get a desired result.
  • Serving with yogurt sauce is optional but the wings go really well with that. Please see the note below about the yogurt sauce recipe.
