Vegan Sugar Free Granola

If you are looking for delicious breakfast cereals but with no sugar, this vegan sugar free granola will definitely satisfy you. It has natural sweetness from the oats and sultanas mixed in with crunchy nuts and almond butter. This nutty, delicious granola packed with nutrients is certainly good breakfast to start your day☺

It’s so hard to find granola with no added sugar or syrup. I love granola but I find shop bought ones are too sweet for breakfast and it gives me a bad after taste. I was bored with my usual cereal break fast which is bran flakes with some fruits so I needed a change. Having been unsuccessful finding sugar less breakfast cereals, I decided to make my own with oats that were sitting in my kitchen cupboard.

Please use gluten free version oats if necessary. You can add seeds such as pumpkin seeds and sunflower seeds or omit nuts and just use seeds instead. The nut butter in this recipe has to be runny one. It mixes in with the other ingredients nicely and coats them easily. If your nut butter is firm, you might need to blend with some oil before adding in. I would also avoid added salt ones. It may spoil the flavour of the granola!

You need to preheat the oven at 150°C (gas mark 2) and line a baking tray with baking paper. Mix nuts, oats and sultanas in a large bowl. Add in the nut butter and mix until the oats are moist and the nuts and sultanas are coated with the nut butter partially. Spread the mixture over the baking tray and bake for 35-40 minutes, stir sometimes for even baking.

Make sure you cool down the granola completely before storing in an airtight container. Enjoy your healthy, delicious breakfast!

Ingredients
  

  • 100 g raw mixed nuts mine had almonds, walnuts, hazel nuts and cashew nuts
  • 360 g rolled oats
  • 80 g sultana
  • 4 tbsp ground flaxseed
  • 120 g almond butter or peanut butter, runny and unsalted one
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 300°C (gas mark 2). Line a baking tray with baking paper and set aside.
  • Chop the mixed nuts and put in the oats with sultana, ground flaxseed in a large mixing bowl.
  • Add in the almond butter and vanilla extract. Mix to combine until oats get moist and you see some nuts are coated with the almond butter.
  • Spread the mixture evenly over the prepared baking tray. Bake for 35-40 minutes. Stir sometimes to cook them evenly without burning. I stirred mine 3 times.
  • Let it cool down completely before storing in an air tight container.

Notes

Please make sure you use almond or peanut butter that have a runny consistency with no salt added. If your nut butter is firm, you might need to add some oil to make it softer before adding.
