No Yeast Flaxseed Bread

This healthy, delicious flaxseed bread requires no yeast! If you have ground flaxseed at home you might be able to give this a try straightaway without shopping for the ingredients!

This No yeast flaxseed bread recipe was born when I had no bread left but couldn’t go shopping as I was staying at home with my son who was sick. I regretted for not going shopping on the previous day. I made this bread based on my breakfast muffin recipe but with slightly different ingredients and methods. It’s soft on the inside and crusty on the outside like yeast bread but with a little bit different texture. Delicious toasted or as is, this simple bread is yummy with sweet or savoury spread! Ingredients needed:

  • Plain flour
  • Baking powder
  • Brown sugar
  • Salt
  • Ground flaxseed
  • Oil
  • Water
  • Oats, sesame seeds or other types of seeds for topping (optional)

You might not have flaxseed but have the rest of the ingredients right? I get my ground flaxseed from Aldi store and it’s quite cheap. Flaxseed is available in many shops nowadays so If you have no Aldi in your area, try different shops or online stores! I used brown sugar for this recipe but you can use any sugar that you have in your kitchen!

Quick making guide:

  1. Preheat the oven to 200°C (gas mark 6) and grease a 8 x 4 inch loaf tin.
  2. Whisk the plain flour, baking powder, sugar, salt and ground flaxseed in a large mixing bowl.
  3. Add the oil and mix.
  4. Add the water and mix well, careful not to overmix!
  5. Pour into the loaf tin, sprinkle some oats or seeds on top (optional).
  6. Bake for about 50 minutes until the top is browned.
  7. Allow to cool well so that it will be easy to slice.

I like to taste this bread when it’s fresh so I let the bread cool until it feels only slightly warm, slice it and eat with vegan margarine. It’s so good!! Next day I enjoy the beard toasted with margarine and jam or avocado, which is super yummy too.

This bread is nice for about 2 days when stored in an airtight container or sealed bag at room temperature. You can keep it in the fridge for a longer storage but it may dry out a little so toast it when serving so that it’s delicious again!

Ingredients
  

  • 300 g Plain flour
  • 3 tsp Baking powder 15g
  • 1 tbsp Bown sugar
  • 1/4 tsp Salt
  • 2 1/2 tsp Ground flaxseed 17.5g
  • 1 1/2 tbsp Oil I use sunflower oil
  • 245 ml Water about one cup
  • some Oats, sesame seeds for topping optional

Instructions
 

  • Preheat the oven to 200°C (gas mark 6) and grease a 8 x 4 inch loaf tin.
  • Whisk the plain flour, baking powder, sugar, salt and ground flaxseed in a large mixing bowl.
  • Add the oil and mix. Then add the water and mix well, careful not to overmix! *
  • Pour into the loaf tin, sprinkle some oats or seeds on top (optional). Bake for about 50 minutes until the top is browned.
  • Allow to cool well so that it will be easy to slice. Please don't attemp to slice when its' still hot, you may end up with a squashy mess.

Notes

*The mixture should be quite thick, not runny.
*The bread will keep for about 2 days in an airtight container or a sealed bag at room temperature.
