Oven Plantain Fries

I imagine some of you are not very familiar with plantain. It looks like a huge banana and unlike banana, you have to cook it to be able to eat. It’s good for cooking both savoury food and dessert, and it’s packed with vitamins and minerals. This oven plantain fries are good alternative to potato fries and they are more nutritious and healthier!

plantain oven chipsI find it difficult to decide what side dish to prepare to serve with a potato based main, especially when salad as a side dish doesn’t seem enough so I twist my brain to come up with ideas for another side. Sometimes I make polenta chips (fries), cauliflower wings, roasted chickpeas and so on. When I saw two plantains in the fridge today I decided to make this oven plantain fries to serve with vegan shepherd’s pie .
